Ingredients
Dressing
- 1 ½ tablespoon apple cider vinegar
- 2 teaspoons maple syrup
- ¼ teaspoon cumin
- 3 tablespoons olive oil
Salad
- 5 medium carrots, sliced into thin “coins”
- ½ cup quinoa, cooked
- 1/3 cup golden raisins
- 1/3 cup pepitas
- ½ cup chickpeas, canned and drained
- 3 tablespoons parsley, chopped
- 3 tablespoons mint, chopped
Directions
- Combine all dressing ingredients in a jar or bowl. Mix to combine.
- Toss all salad ingredients together in a large bowl. Top with dressing and mix.
*If making ahead, add pepitas, herbs, and dressing just before serving.
