Veggie Au Gratin

Ingredients

  • 4 cups vegetables, (cauliflower, broccoli, squash, pearl onions, potato, yam, etc.)
  • 1 cup pumpkin or sunflower seeds (or a combination of the two seeds)
  • 2 - 4 cloves garlic
  • sea salt

Directions

  1. preheat oven 350°F
  2. place vegetables in an oven safe baking dish
  3. blend seeds, garlic, and a couple pinches of salt with 2 cups water, blend until smooth
  4. pour over vegetables, cover, bake 30 min
  5. remove lid, bake 10 min or until golden brown on top and bubbling
  6. remove from oven, let sit 10 – 15 min before serving
